We have unlimited recipes available to us at our fingertips today, but there's nothing quite like looking through my recipe box and finding an old favorite with stains and smudges from years gone by. Fresh from the oven, filling my house with the lovely smells and memories of the past, like an old friend coming for a visit with remembrances of old times.
Bananas Foster Bread
Serves 16
1 ½ cups mashed ripe bananas
1 cup packed brown sugar, divided.
6 Tbsps. butter melted and divided.
¼ cup cognac or dark rum, divided
1/3 cup plain fat-free yogurt
2 large eggs
1 ½ cups flour
¼ cup ground flaxseed
¾ tsp. baking soda
½ tsp. salt
½ tsp. cinnamon
1/8 tsp. allspice
1/3 cup powdered sugar
Preheat oven to 350 degrees.
Combine bananas, ½ cup brown sugar, 5 Tbsps. butter & 3 Tbsps. Cognac/rum in a nonstick skillet. Cook over medium heat until mixture begins to bubble. Remove from heat and cool.
Place banana mixture in a mixer bowl. Add yogurt, ½ cup brown sugar, and eggs. Beat with a mixer at medium speed.
In a small bowl, combine flour, flaxseed, baking soda, salt, cinnamon, and allspice. Add flour mixture to banana mixture and beat until blended. Pour batter into a greased 9" x 5" loaf pan. Bake for 60 minutes or until wooden pick inserted in center comes out clean. Remove from oven; cool for 10 minutes in pan on a wire rack. Remove bread from pan and place back on wire rack.
Combine remaining 1 Tbsp. melted butter, 1 Tbsp. Cognac/Rum and powdered sugar. Stir until well blended. Drizzle over warm bread. Savor to your heart's delight!
