Grilled Salmon with White Rice and Roasted Vegetables
Ingredients:
For Grilled Salmon:
- 4 salmon fillets (about 6 oz each)
- 2 tablespoons olive oil
- 2 cloves garlic, minced
- 1 teaspoon lemon zest
- 2 tablespoons lemon juice
- 1 teaspoon dried dill
For White Rice:
- 1 cup white rice
- 2 cups water
For Roasted Vegetables:
- 2 cups mixed vegetables (such as cherry tomatoes, bell peppers, and zucchini), chopped
- 1 tablespoon olive oil
- Fresh herbs for garnish (optional)
Instructions:
- Grill Salmon:
- Preheat the grill to medium-high heat. Grill the salmon for about 4-5 minutes per side, or until the salmon is cooked through and flakes easily with a fork.
- Prepare White Rice:
- In a saucepan, combine white rice and water. Bring to a boil, then reduce heat to low, cover, and simmer for 15-20 minutes, or until the rice is cooked and water is absorbed. Fluff with a fork and set aside.
- Roast Vegetables:
- Preheat the oven to 400°F (200°C).
- Toss the mixed vegetables with olive oil, salt, and pepper. Spread them on a baking sheet and roast for about 15-20 minutes, or until the vegetables are tender and slightly caramelized.
