QUICK COLD NOODLES (NY STYLE)
Ingredients for Peanut Sauce:
- 1/2 cup smooth peanut butter
- 2 tbsp. soy sauce
- 2 tsp. white sugar
- 1 tsp. minced garlic
- 1/2 cup water
- 1/8 cup rice vinegar
- 1/2 tsp. sesame oil
- 1/16 cup peanut oil
- bit of shaved fresh ginger (to taste)
- 2 green scallion onions (diced)
Other Ingredients:
- 3/8 cup salted peanuts, chopped
- 1/2 lb. spaghetti noodles
- 1/8 cup sesame seeds
Instructions:
Combine all sauce ingredients. Add 1/2 of the peanuts and set aside. Cook pasta. Drain pasta and add to sauce while tossing. Refrigerate to thicken for approximately 4 hours. When serving, top with remaining crushed peanuts and sesame seeds.
PRO TIP: You may add a bit of cayenne pepper for an extra kick.
