We have to give credit for the genesis of this pretty and pinkish-red cocktail to the mixologists at Red 36 in Mystic where I first drank this lovely libation, a twist on a tradtional Paloma. I recreated it at home after a few unsuccessful attempts. Its rosy red color and bubbly splash of champagne makes it a lively drink on Valentine's Day! Use freshly squeezed lime juice and not the bottled kind.
Ingredients:
Freshly squeezed lime juice from half a lime
Splash of champagne or sparkling wine
1.5 ounces tequila
1 ounce grapefruit liquor
1 ounce Compari liquor
Pour all ingredients except the champagne into a shaker with ice. Shake vigorously. Strain into a martini or gimlet glass and top with a splash or two of champagne, prosecco, or your favorite sparkling wine. Garnish with a lime wedge or twist. For an extra-festive touch, garnish with a frozen, salted half slice of grapefruit.
