Celebrating the First Decade of Dalie’s Smokehouse

Dalie's Head Chef Craig Basler reflects on 10 years of flavor, family, and community.

What does this 10-year milestone mean to you and the team?
It means everything. We’ve built amazing relationships over the years. Our team feels like family, and so do our customers. Some folks have been coming here since day one, a couple of times a week. It has given us a chance to become part of this community.

How has Dalie’s evolved over the years?
At first, it was total chaos. We were figuring it out as we went along. But now, we’ve nailed down daily specials, such as Cajun Wednesdays and comfort food inspired by my grandparents’ recipes. We even started making our own sausage and charcuterie in-house. We continually strive to expand our efforts.

What makes Dalie’s stand out?
It’s more than just barbecue. We found that out a long time ago. We try to create a relaxed, backyard vibe where everyone feels welcome. We don't have servers, but on weekends, someone is on the floor interacting with customers. Without that element, it wouldn't taste as good.

First visit to Dalie’s - what do you order?
You’ve got to try the ribs. If you want a sandwich, order the Cuban; people have said it’s the best you can get outside of Cuba.

What’s the most underrated item on the menu?
Surprisingly, the smoked balsamic portobello mushroom sandwich is a hit. We created it for an event, but people loved it so much that we had to keep it. Even meat-eaters rave about it.

Any favorite dishes?
I like our smoked pork belly pastrami. Making it can be time-consuming, but man, it’s worth it.

What’s next for Dalie’s?
Expanding, for sure. Maybe a retail spot for our sausages and charcuterie, more special events, and one day, a pizza oven out back for laid-back wine-and-pizza nights.

What’s the plan for the 10th anniversary bash?
It’s going to be awesome. We’ll have a crawfish boil, a hog roast, and live music. June 29th is the exact day we opened 10 years ago, so it felt right to celebrate it big with everyone who’s been along for the ride.
