Make simple Italian favorites with Mezza Luna's Chef Stefano Franciosi

Traditional Pesto

Pesto is a classic Italian sauce that originated in Genoa, Italy and is very simple to make, only requiring a few fresh ingredients. This simple sauce is something anyone can add to their repertoire and elevates even the most basic of pasta dishes. Add chicken or shrimp for a delicious meal everyone is sure to enjoy!

Ingredients:

  • 2 cups fresh basil leaves
  • 1/2 cup freshly grated Romano or Parmesan cheese 
  • 1/2 cup extra virgin olive oil 
  • 1/3 cup walnuts 
  • 1 garlic clove
  • 1/4 teaspoon salt
  • 1/8 teaspoon freshly ground black pepper

Instructions:

Rinse fresh basil leaves well and remove any stems. Add all ingredients except olive oil to a food processor. Blend well, while slowly adding in the olive oil. Toss your favorite pasta in the pesto and serve, or spread on slices of toasted french bread and enjoy! 


Simple Bruschetta

Bruschetta is a classic and elegant Italian appetizer that anyone can make. The secret to this iconic recipe is fresh and high-quality ingredients. Roma tomatoes are firmer and less juicy than other tomato varieties, which makes them perfect for dicing. Fresh basil, garlic, and balsamic vinegar add a rich layer of flavor. Using the best quality extra virgin olive oil elevates this recipe, so the only seasonings you need are the simple classics salt and pepper. 

  • 1/4 cup olive oil
  • 1 finely minced clove of garlic
  • 6-8 Roma Tomatoes, finely diced
  • 1/4 cup fresh basil, sliced into ribbons
  • 1 tbsp balsamic vinegar, add more to taste
  • Salt and Pepper to taste
  • 1 loaf ciabatta bread, sliced and toasted

Heat olive oil on medium heat; add in minced garlic and sauté until just golden, about one minute. Add garlic-infused oil to a large bowl and let cool. While the oil is cooling, chop tomatoes and basil. Add to olive oil mixture. Add balsamic vinegar, salt, and pepper, then toss to coat. Toast ciabatta bread to your liking, and then add your bruschetta mix on top.

Caprese Salad

Caprese Salad is said to have originated on the Italian Isle of Capri. It captures the bright, fresh feel of warmer days, and it's the perfect addition to any meal!

Ingredients:

  • 6-8 Roma tomatoes thinly sliced
  • Fresh mozzarella sliced in 1/4 inch slices
  • Extra Virgin olive oil
  • Balsamic Glaze
  • Fresh Basil
  • Salt & Pepper to taste

Slice both the mozzarella and tomato about 1/4 inch thick, then add a touch of salt to the tomatoes, add the mozzarella on top, add one or two basil leaves on top. Drizzle extra virgin olive oil, pepper and balsamic glaze, and enjoy!
