How lucky we are to be able to eat delicious local food all year round! This month we feature three unique local farms. Grow Food Northampton proudly works with these farms among dozens of others.
Winter Moon Roots in Hadley
This farm offers organic carrots, beets, parsnips, turnips, and radishes, harvested as late as possible in the fall, resulting in super sweet flavors. Available at Cornucopia Natural Wellness Market and River Valley Co-op.
Crimson and Clover Farm in Florence
The farm store is now open year-round on Thursdays and Fridays from 2:30 to 6:30 p.m. and Saturdays from 10 a.m. to 2 p.m. with bountiful CSA shares available all summer and winter long.
Sleepy Owl Herbs at Hemenway Hill Farm in Williamsburg
Handcrafted herbal apothecary, rainbow eggs, grass-fed beef, baked goods and more. The farm store is open daily from 10 a.m. to 6 p.m.
Grow Food Northampton's Winter Market will take place Feb. 10 and 24 and March 9 and 23 from 10 to 2 p.m.
Sweet Roasted Roots
● 4 beets
● 4 carrots
● 2 TBS. olive oil
● salt and pepper
● 1 TBS. butter
● 2 TBS. honey
● 2 TBS. chopped fresh herbs
Directions:
● Preheat oven to 450 degrees.
● Chop carrots and beets into even 1/2-inch pieces.
● Toss with olive oil, salt and pepper and spread vegetables out on a pan.
● Roast at 450° for 20-25 minutes or until tender.
● Melt butter and whisk in the honey.
● Remove the pan from the oven and pour the honey-butter mixture over the vegetables. Toss until well coated. Add salt to taste.
● Return to the oven for 5 minutes.
● Top with fresh herbs to serve.
